Iyengar style puliyogare/Puliyodharai/Tamarind rice

Puliyodharai is my all time favourite. I used to cook this often. This is so tangy and yummy. This is iyengar style recipe so tastes like temple prasadam.


I used to cook big batch of pulikachal and Mel podi(spice powder) and store it in a airtight container and refrigerate it. This keeps good for a month.

Cold coffee is my keeper recipe. I used to make this often for my family. All my family members love to have this during hot days but I'll have it even during rainy days

I am sure many of you will have a habit of drinking coffee. For those coffee lovers this recipe is dedicated. Give it a try then sure you won't go for costly coffee shop to buy cold coffee.

Vazhaipoo vadai/banana flower fritters

Vazhaipoo vadai is the first thing comes to my mind when I see vazhaipoo. It's not only tasty snack but healthy too.

I have posted how to clean vazhaipoo for the beginners so anybody can cook this crispy, tasty snack.

Preparation time:10minutes
Cooking time:2minutes per batch
Soaking time:2 hours
Makes:14

Ingredients:

  • Vazhaipoo 1cup cleaned and chopped(for more details click here)
  • Channa dal 1/3cup soaked for 2hours
  • Onion/periya vengayam 1 medium sized chopped finely
  • Fennel seeds/sombu 1/4teaspoon
  • Curry leaves a spring chopped
  • Green chilli 1 chopped finely
  • Ginger 1/2 teaspoon grated
  • Salt to taste

  • Oil for deep fry


Method:

Clean vazhaipoo/banana flower (for more details click here)
Blend the soaked channa dal coarsely without adding any water. If you add water then you can't make vadai. Take this in mixing bowl.
Add all the ingredients mentioned above except oil.
Now make a dough. Roll it into balls and flattened using your palm. I had done both as vadai and balls.
Deep fry it in a hot oil.
Serve it hot.

Stepwise pictures:

Take soaked channa dal in blender.

Blend it coarsely without adding any water.

Take this in a mixing bowl.

Add in fennel seeds.

Now add in green chilli.

Add in curry leaves.

Add chopped onion.

Add in grated ginger.

Add in cleaned and chopped vazhaipoo.(for more details click here)

Add salt to taste.

Mix well and shape it to balls and flattened using your palm.Repeat this till dough gets over. Arrange it in a plate.

Deep fry it.

Drain excess oil in newspaper or tissue paper.

Serve hot.


Notes:


  • If your dough gets watery and couldn't shape it add a tablespoon of gram flour.
  • When you drop vadai in hot oil if your vadai starts to separate then add a tablespoon of gram flour.

How to clean banana flower/vazhai poo

Hey folks today I made vazhaipoo vadai for evening snacks. Cleaning vazhaipoo is easy but many of my friends doesn't know how to use it. So posting this for beginners in cooking.

Whole banana tree can be used in many ways and also each and every part of the tree is healthy for our body.


Leaves,flower,raw banana,fruit,steam. Banana leaves are used for cooking (ilai kozhukattai),serving foods(you can see in many traditional functions in South India).

Here goes how to clean banana flower. Hope this will help.

Ingredients:

Vazhaipoo/banana flower
Sesame oil for greasing your hands

Method:

Take a big plate and grease your hands using sesame oil.
Open the petals one by one and remove the florets.
Rub it in your palm. You can see the stamen(stem like one) and cover like portion. These are the ones you have to remove it before cooking.
Repeat this. At one stage you can't remove those those florets can be used as it is.
Finally you'll get small white cone shaped tender flower. Eat it as it is. It's healthy and good for stomach ulcer.
Chop the florets and cook any recipes using it.

Notes:

You can clean this a before and place this in Ziploc bag and refrigerate it or chop it and soak it in buttermilk.

Stepwise pictures:

Take banana flower.

You have to apply sesame oil to your hands to prevent from blackening.

Open the petals.

Remove the florets.

Collect big florets separately and smaller florets separately.


Repeat this.At one stage you can't remove those stamens and cover like one it can be used as it is.

Finally you'll get small white cone shaped tender flower. Eat it as it is. It's healthy and good for stomach ulcer.


Rub it in your palm and you can see stamen and cover like one.

Just pull both of it to remove.

Now its removed. This has to be used.


Chop it.

Use it in any of your recipes. I cooked vazhaipoo vadai

Rava ladoo/Sooji ladoo using ghee

Rava ladoos are my dad's favorite ladoos. He loves it a lot. I just tried last for Krishna jayanthi and forget to post this yet. Many of my friends asked me to post diwali sweets and snacks thought to share this easy sweet first and stay tuned for upcoming diwali sweets.

These lados ame out really good. I made it using ghee. Few people makes this using milk so I made that today and posting that as next post.

Poorna kozhukattai/stuffed modak

This my favourite modak because my mom used to do this every vinayagar chathurthi. In childhood days, I used to help my mom for stuffing the poornam 


 This is one of the easiest modak recipe because you don't need to cook anything for poornam just grind it and stuff it.
