Vanilla sponge cake without oven

I am here with fool proof vanilla sponge cake. I saw this recipe in an youtube channel Michael Lim. This needs only few ingredients. Luckily I had everything in my pantry. So I started this recipe without wasting time.


This cake has egg. Soon I'll share egglesd version as well. In this recipe you need hand blender this plays a major part here. Still now I baked 3 times,everytime it was a great success and tastes just yum. I loved it a lot.

Preparation time:15minutes
Baking time:30-40minutes
Makes:16slices

Ingredients:

  • All purpose flour 1cup/120gram
  • Sugar 1cup/120gram
  • Eggs 4large
  • Lemon extract/vinegar 1teaspoon
  • Oil 2tablespoon/30ml/30gram
  • Milk 2 tablespoon+2teaspoon/40ml/40gram
  • Vanilla essence 1/2teaspoon
  • Salt 1/2teaspoon
Method:
Powder the sugar and set aside. In a small bowl,add in oil,milk,vanilla essence and set aside.Separate the eggs to egg white and yolk. In a mixing bowl,add in egg white,lemon extract and whip it well using hand blender till it becomes white foamy texture. To make sure check stepwise pictures.Add in powdered sugar and whip it till it becomes stiff. Preheat pressure cooker in high flame for 10 minutes(Click here for more details)
Add in egg yolks and mix it well using spatula. Add in flour with a pinch of salt and mix it well. Once everything combined,add in oil,milk,vanilla mixture and mix it well.
Take the baking pan and apply oil all over the pan. Dust flour all over the pan. Pour the cake batter and bake it in pressure cooker for 30-40minutes or insert toothpick in center of cake pan. If it comes out clean then your cake is done.
Allow it to cool and invertthe cake pan and slice it and enjoy...

Stepwise pictures:
In a mixing bowl,add in egg whites,lemon extract and whip it using hand blender.
It becomes froathy and turns white foamy. At this stage add powdered sugar.
Whip it till it becomes creamy and at one stage in becomes stiff. If you invert your mixing bowl,not even a drop should fall down.
Preheat pressure cooker in high flame for 10 minutes(Click here for more details)
Add in egg yolks and mix it well using spatula.
Add in flour with half a teaspoon of salt and mix it well using spatula.
In a small bowl,add in oil,milk and vanilla essence. Add this to the mixture and give a good stir.
Prepare baking pan by greasing oil all over the pan and dust the flour all over the pan and tap the remaining flour. Now add the cake batter in prepared baking pan.
Place the baking pan in preheated pressure cooker and bake in low flame for 30-40minutes. Insert the toothpick in center of the cake,if it comes out clean then it's baked else wait for 5-10minutes.
See how it has baked. You can cut off the crust if you wish.
Once it gets cooled completely. Start slicing  the cake. See how soft it looks.
Serve it plain or sieve icing sugar over it.
Pour some chocolate sauce. Even you can use any icing.tastes yum yum

Notes:

  • Using hand blender is must only then you can see achieve the correct consistency.
  • Before adding egg yolks make sure the mixture is stiff enough. If you invert the bowl not even a drop should be fall down.
  • Creamy egg whites,sugar mixture is also known as royal icing. You can make second batch and use as icing if you wish.
  • Baking time differs for many reasons like size of cooker,size of baking pan,etc.
