Chettinad Chicken Gravy

Coming to today's recipe, chettinad chicken gravy. I done this last week and tasty awesome because of freshly ground masala. I love chettinad cuisine so much. I have already shared chettinad mushroom gravy.

Preparation time:10minutes
Cooking time:20minutes
Serves:4

Ingredients:

Chicken 1/2kg/500 grams
Onion 2 large sliced thinly
Tomatoes 2 medium sized chopped roughly
Ginger garlic paste 2 tablespoon
Curry leaves a small handful
Oil 2tablespoon
Turmeric powder 1teaspoon
Salt to taste
Lemon juice 2tablespoon
Coriander leaves 3tablespoon chopped finely

For chettinad masala:

Coriander seeds 3tablespoon
Dry chilli 4 or to taste
Fennel seeds/Sombu 2teaspoon
Cumin/jeera 1teaspoon
Cinnamon stick 5cm stick
Kalpasi 3pieces
Black pepper 2teaspoon
Green cardamom 5
Star anise 1
Cloves/krambu 4
Fresh coconut 1/4cup grated and tightly packed

Method:
Take chicken in a mixing bowl,add in turmeric powder,salt and lemon juice. Let it marinate for 15 minutes
Dry roast all the ingredients given under chettinad masala except coconut. Once everything turns golden brown add in coconut and roast it well and allow it to cool. Grind it to paste by adding little water.
Heat oil in a pressure cooker. Add in Onion ans saute it till it turns translucent. Now add in Ginger garlic paste. Once it leaves raw smell add in curry leaves. Add in marinated chicken. Give a good mix. Add in chopped tomatoes and pressure cook it for 2 whistle and simmer for 5minutes. No need to add any water.Let the steam goes by itself.
Now add in fresh masala and give a good mix and check the seasoning and mix well and cook for 1 more whistle. Serve hot with rice,biryani,dosa anything.

Stepwise pictures:
Take chicken in a mixing bowl.
Add in salt.
Add in turmeric powder.
Squeeze lemon juice.

Mix it well. Let it marinate for 15 minutes.

Heat oil in pressure cooker.(sorry for bad picture)
Add in sliced onions and saute it till it turns translucent.
Add in ginger garlic paste and saute till it leaves its raw smell.
Add in curry leaves.
Add in marinated chicken and tomatoes. Cook it for 2 whistles and simmer for 5 minutes. Let the steam escapes by itself.
Dry roast all the ingredients given under fresh masala except coconut. Saute it till it turns golden brown.
Add in coconut and saute it well.
Take this in a blender.
Grind it to a paste by adding little water.
It gets cooked well.
Now add in fresh masala. Mix it well and check the seasoning. Cook it for 1 more whistle.
Open the cooker,see how oil floats on the gravy like restaurant style.
Add in chopped coriander leaves and serve hot with anything like rice,dosa.
