Eggless Nankhatai cookies without oven

Hi everyone, there are many varieties of nankhatai cookies recipes. I tried one of them and it tastes really good. My daughter loved it a lot. So going to bake second batch tomorrow.


Nankhatai cookies is made using maida and gram flour in this recipe. Other version will update soon so stay tuned.

Preparation time:10minutes
Cooking time:15minutes per batch
Makes:20

Ingredients:

  • All purpose flour 1cup
  • Gram flour 1/2cup
  • Sugar 1/2cup powdered
  • Ghee/butter 1/2cup melted
  • Baking powder 1/2teaspoon
  • Baking soda 1/4teaspoon
  • Cardamom powder 1/2teaspoon

Method:
In a mixing bowl,add in all purpose flour,gram flour,baking powder,baking soda. Mix it well and set aside.
In a mixing bowl,add in melted ghee,powdered sugar,cardamom powder and cream it well.
Add in dry ingredients and mix it well and form a dough.
Preheat pressure cooker in high flame for 10minutes(Click here for more details).
Roll it into ball and flatten it using palm or roll it in clean countertop and cut it into desired shape.
Place this in a greased pan/plate. Bake this in pressure cooker in low flame for 15minutes or till cookies base turns brown.
Have a sweet snacks.

Stepwise pictures:
In a mixing bowl,add in all purpose flour.
Add in gram flour.
Add in baking powder.
Now add baking soda.
Mix it well and set aside.
In a mixing bowl,add in melted ghee.
Add in powdered sugar.
Add in cardamom powder.
Whisk it well till everything gets combined.
Add in dry ingredients.
Mix it well and form a dough.
Preheat pressure cooker in high flame for 10minutes(Click here for more details).
Roll it in a clean countertop.
Cut it into desired shapes.
Place this in a greased pan/plate.
Bake this in low flame for 15minutes.
Or till the base of cookies turns brown.
Allow it to cool and serve it with joy.
Notes:
  • It looked soft when the cookies base turns brown. Once cooled the cookies becomes crispy. Don't overbake.
  • My dough was at correct consistency so didn't add any wet ingredients. If your dough is dry then add a tablespoon or more and form dough.
  • You can also add any nuts for decoration. I didn't add any as my daughter is not fond   of nuts.
