Rava idli/Sooji idli

Today's recipe is Rava idli. The most common food made with Rava is either umpa or kichidi. This is one of the alternate idea to cook a tasty food using rava. Rava idli and rava dosa are viewers requested recipe. Soon I'll post rava dosa recipe as well.

You don't need to ferment this batter. Its instant can make the batter within 10minutes and steam this in idli cooker. In this recipe I used eno salt.

Makes:10 idli

Ingredients:

  • Rava/sooji 1cup
  • Curd/yogurt 1/2cup
  • Oil 1tablespoon
  • Ghee 1tablespoon
  • Mustard 1/2teaspoon
  • Urad dal 1teaspoon
  • Channa dal 1teaspoon
  • Cashews 1tablespoon
  • Curry leaves 1/2tablespoon chopped finely
  • Coriander leaves 1/2tablespoon chopped finely
  • Green chilli 3chopped finely
  • Ginger 1tablespoon chopped finely
  • Lemon extract 1/2teaspoon
  • Salt to taste
  • Water as needed
  • Eno fruit salt 1teaspoon

Method:

Heat oil,ghee in a kadai. Add in mustard,urad dal,channa dal,cashews. Let them splutter. Add in ginger,green chilli,curry leaves and coriander leaves and saute for a minute. Add in rava/sooji. Saute it in low flame for 5minutes or so and switch off the pan. Allow it to cool.
Once cooled add in curd,squeeze lemon,salt and add in water till it reaches idli batter consistency. Neither too thick nor too thin. Boil water in idli cooker. Once water starts to boil,add in eno fruit salt to the batter and mix it well. Pour the batter in idli plates and steam it. Rava idli ready!!!

Stepwise Pictures:
Heat oil and ghee in a kadai.
Add in mustard,urad dal,channa dal and cashews. Let them splutter.
Add in chopped ginger and green chilli.
Add in chopped curry leaves and coriander leaves. Saute it for a minute.
Add in rava/sooji.
Roast it in low flame for 5minutes or so.
Transfer this to a bowl and allow it to cool.
Add in curd.
Squeeze half a teaspoon of lemon extract.
Add in water and mix it well it till reaches desired consistency.
Add in salt to taste and give a good mix.
Boil the water in idli cooker. Once the water starts to boil,add in a teaspoon of eno fruit salt and mix it well.
This is major step and don't skip this.
Once eno fruit salt is added,the batter becomes bubbles. Then pour the batter in idli cooker plates and steam it.
Serve raja idli with your favourite chutney.

Notes:

  • Eno salt is mandatory so don't skip this.
  • Batter should neither too thick nor too thin.
  • You can also use ginger and green chilli as a paste. 
  • I served this for my daughter with some dry fruits. Dry fruits I used here are just for presentation.
