Eggless Vanilla yogurt cupcake recipe without oven

Vanilla yogurt cake is very simple recipe. Its eggless version and you need only few ingredients. I baked this cake using cake flour which was my last post.

This cake is so moist and stays fresh for couple of days. Perfect for tea time snacks. Muffins was so soft and fluffy also tastes great.

Preparation time:10 minutes
Baking time:25minutes
Makes:8medium sized muffins
Ingredients:

  • Cake flour 1cup
  • Sugar 1/2cup
  • Yogurt/thick curd 3/4cup
  • Cooking oil 1tablespoon
  • Vanilla essence 1/2teaspoon
  • Baking powder 2teaspoon
  • Baking soda 1 teaspoon
  • Table salt a tiny pinch

Method:
Preheat pressure cooker for 10minutes in high flame.click here for more details.
In a mixing bowl,add in yogurt,cooking oil,vanilla essence.
Add in baking powder,baking soda,table salt.
Add in sugar and mix it well.
Add in cake flour and fold gently using spatula.
As I am baking this in cooker,I am going to use paper cups for baking purpose. Please take a look in stepwise pictures to clear your doubts.
Place cupcake liners in paper cups and spoon the batter. Place the cups in baking pan and bake this in preheated cooker.
Allow it to cool. You can also use any froasting to this.
Stepwise pictures:

Preheat pressure cooker for 10minutes in high flame.click here for more details.
In a mixing bowl,add in thick yogurt.
Add in oil.
Add in vanilla essence.
Add in baking powder.
Add in baking soda and table salt.
Add in sugar. I powdered regular sugar and used here.
Mix it well. I transferred it to big bowl.
Add in cake flour.
Fold it gently using spatula.
Place cupcake liners in paper cups.
Spoon in the cake batter and place it in baking pan.
Bake this in low flame till done. Insert toothpick and see whether it comes out clean or not.
Allow it to cool and have it in your tea time.

Notes:

  • You can bake this as a regular cake using normal cake pan and bake it for 35-40minutes.
  • Muffins will rise more so spoon the batter only 3/4th of cup.
  • You can use any nuts,chocolate chips,etc to this muffins for different flavours.
  • I used regular sugar but powdered it.
