Chilli parotta

Chilli parotta is one of the famous dish in Tamilnadu. There are many type of parotta available here veechu parotta,kothu parotta,stuffed parotta,egg parotta etc. Soon I'll share all those recipes here.

If you have parotta readily in your hands and this dish can be done within minutes. Chilli parotta is a spicy version and I love it so much.

Preparation time:5minutes
Cooking time:10minutes
Serves:2

Ingredients:

  • Parotta 2
  • Onion 1
  • Tomato 1
  • Green chilli 1
  • Ginger 1teaspoon finely chopped
  • Red chilli powder 1teaspoon
  • Garam masala 1teaspoon
  • Salt to taste
To temper:
  • Oil 1 tablespoon
  • Cinnamon 1inch piece
  • Clove 1
  • Curry leaves 1spring
Method:
Heat oil in a pan. Add in ingredients given in "To temper".
Add in ginger and green chilli and saute it till it leave its raw smell.
Now add in onion and saute it till it turns translucent. Add in tomato and cook it till mushy.
Add in spice powders and give a good mix.
Cut parotta into small pieces and add it to masala and toss it well.
Now cook this in high flame for few minutes but be careful don't burnt it.
Tasty spicy Chilli parotta ready

Stepwise pictures:

Heat oil in a pan or kadai.
Add in cinnamon,clove.
Add in curry leaves let them splutter.
Add in ginger.
Add in green chilli.
Now add in onion and saute it till it turns translucent.
Add in tomato and saute it till it turns mushy.
Add in spice powders and salt,give a good mix.
Add in roughly chopped parotta and toss it well.
Toss it well till everything gets mixed well.
Spicy Chilli parotta ready!!!

Watermelon juice with pulp

Summer arrived...Keep hydrated by having more liquids. Here I started making many juices and milkshakes. So stay tuned for more juice recipes.

I love watermelon very much. Whenever watermelon season arrives used to buy lots and lots of watermelon to refresh from hot summer.

Preparation time:5minutes
Refrigerating time:2hours atleast

Ingredients:

Watermelon 5cups chopped roughly
Sugar 1/3cup(use sugar level according to the taste of watermelon)
Water 2/3cup
Icecubes as needed

Method:
Take sugar and water in a saucepan and heat it till sugar melts. No need any string consistency.
Chop watermelon roughly. Take this in a bowl or airtight container. Add sugar syrup to it. Close the lid and refrigerate it for atleast 2hours.
Juices from watermelon will ooze out and the juice tastes just awesome.
Serve chilled.

Stepwise pictures:
Take sugar in a saucepan.
Add in water.
Heat it up.

Once sugar gets melted completely,switch off the flame and allow it to cool.
Chop watermelon roughly. I got 5cups of watermelon.
In a bowl or airtight container,add in ice cubes. I used a jug.
Add in chopped watermelon.
Add in sugar syrup.
Give a good mix.
Close the lid and refrigerate it for atleast 2hours.
Serve chilled.

Notes:

  • Adjust sugar level to the taste of watermelon.
  • Refrigerating for 2hours is must. Only then the fruit will ooze out its juice and tastes good.

Eggless Vanilla yogurt cupcake recipe without oven

Vanilla yogurt cake is very simple recipe. Its eggless version and you need only few ingredients. I baked this cake using cake flour which was my last post.

This cake is so moist and stays fresh for couple of days. Perfect for tea time snacks. Muffins was so soft and fluffy also tastes great.

Preparation time:10 minutes
Baking time:25minutes
Makes:8medium sized muffins
Ingredients:

  • Cake flour 1cup
  • Sugar 1/2cup
  • Yogurt/thick curd 3/4cup
  • Cooking oil 1tablespoon
  • Vanilla essence 1/2teaspoon
  • Baking powder 2teaspoon
  • Baking soda 1 teaspoon
  • Table salt a tiny pinch

Method:
Preheat pressure cooker for 10minutes in high flame.click here for more details.
In a mixing bowl,add in yogurt,cooking oil,vanilla essence.
Add in baking powder,baking soda,table salt.
Add in sugar and mix it well.
Add in cake flour and fold gently using spatula.
As I am baking this in cooker,I am going to use paper cups for baking purpose. Please take a look in stepwise pictures to clear your doubts.
Place cupcake liners in paper cups and spoon the batter. Place the cups in baking pan and bake this in preheated cooker.
Allow it to cool. You can also use any froasting to this.
Stepwise pictures:

Preheat pressure cooker for 10minutes in high flame.click here for more details.
In a mixing bowl,add in thick yogurt.
Add in oil.
Add in vanilla essence.
Add in baking powder.
Add in baking soda and table salt.
Add in sugar. I powdered regular sugar and used here.
Mix it well. I transferred it to big bowl.
Add in cake flour.
Fold it gently using spatula.
Place cupcake liners in paper cups.
Spoon in the cake batter and place it in baking pan.
Bake this in low flame till done. Insert toothpick and see whether it comes out clean or not.
Allow it to cool and have it in your tea time.

Notes:

  • You can bake this as a regular cake using normal cake pan and bake it for 35-40minutes.
  • Muffins will rise more so spoon the batter only 3/4th of cup.
  • You can use any nuts,chocolate chips,etc to this muffins for different flavours.
  • I used regular sugar but powdered it.

Cake flour can be easily made at home. You only need 2ingredients. Using this you can bake any recipes that calls cake flour. It is not a big task or recipe.

I baked a cake using this flour and it was too soft and moist. I'll also post that cake recipe as my next post so stay tuned.

Homemade Icing sugar recipe/confectioner' sugar

Icing sugar are used in many frosting recipes. This needs only 2 ingredients granulated sugar and cornstarch. One of my viewers requested me to post this recipe so thought to share this here.

Many of the beginners doesn't know the difference between powdered sugar and icing sugar/confectioners' sugar. Cornstarch is used here to avoid clumps. If you grind sugar alone then it tends to clumps together. Also cornstarch helps to give creamy texture.

Today's recipe is custard powder cookies. It needs only a handful ingredients. Its simple recipe even beginners can bake this that too without oven.
