Instant Ragi cerelac for babies

Cooking time:15-20minutes for a batch
Makes:1.5cup
- Ragi flour 1cup
- Palm candy powder/panagarkandu powdered 1/4cup
- Homemade ghee 1/4cup
- Milk 1/4cup
Preheat pressure cooker for 10 minutes. (For more details view How to bake using pressure cooker)
Take whole ragi flour in mixing bowl. Add in powdered palm sugar candy.
Mix it well.
Add in melted ghee and mix it well. It resembles coarse crumble.
Add in milk slowly and knead it to a dough.
Roll it out in countertop.
Cut into squares or whatever shape you need.
Place this in oil greased plate/pan.
Place this in preheated cooker and bake it for 15 minutes or till your cookies turns crispy and browned at bottom.
You can have as it is or powder it in blender and feed it as instant ragi cerelac.
Form a dough.
Roll it out in a clean countertop.
Cut it into desired shapes.
Arrange it in oil greased pan/plate.
Bake this in simmer flame for 15-20minutes till cookies turns brown at its bottom.
It has to be like this at its bottom.
You can have it as it is as biscuits for elder kids.
Take this in a blender.
Powder it.
Store this in airtight container.
How to make instant ragi cerelac:
Take 1 or 2 scoops of instant cerelac powder in a bowl. Add hot water/milk slowly and mix well till you reach desired consistency
- For babies below 1 year add hot water.
- For babies above 1 year add hot milk.
- This recipe is for babies above 6months.
- Always consult your paediatric before introducing any new food to your babies.
- Only if to bake the cookies till crispy,you'll get good shelf life.

Dried black current:
Rich in vitamin C,E,B1,B5,B6,antioxidants.

Cooking time:5minutes
Makes:a glass of milk and 2mini ladoos
- Dried figs 1/2
- Dates 2
- Black current dried few
- Raisins few
- Coarse dry fruits powder 1teaspoon
- Fine dry fruits powder 1-2teaspoon
- Organic powdered jaggery to taste
- Milk 1glass(180ml)
Shape them into ladoos.
Now add in already boiled lukewarm milk and mix it well till jaggery gets dissolved.
Have a healthy snacks.
- I always make ladoos only few minutes before serving to my daughter. So I don't make a big batch always prefer fresh ones.
- If you were working mom then it is okay to make them in a big batch and store this in refrigerate. It keeps good for more than a week.
- Adjust measurements according to your tastes. Measurements are totally up to your choice. You can increase or decrease any measurements in ingredients.
- If you already introduced all dry fruits separately and your baby doesn't get any allergies then give it above 10 months (who has teeth and knows to chew well)
- Dry fruits milk is only for baby's above 1year.
- Ladoos doesn't need any sweetener as sweet by nature.
- Sweetener for dry fruits milk is up to you. You can use any sweetener but jaggery,palm candy powder,white candy powderand brown sugar are good for babies compare to regular sugar.
- Always consult paediatrician before introducing any recipe to your baby's diet.

Wheat jaggery cake

Wheat jaggery cake is famous in srilanka.
This is kids friendly cake. I baked this for my daughter who loves it lot. This is simple cake made with handful of ingredients which are already available in your pantry.
Cooking time:20-25minutes
Makes:8slice of cake
- Whole wheat flour 1.5cup
- Powdered Jaggery 1cup tightly packed
- Oil(any vegetable oil) 1/2cup minus 1tablespoon
- Baking powder 2teaspoon
- Table salt a small pinch
- Cardamom powder 1/2teaspoon
- Vanilla essence 1teaspoon
- Water 1cup
Sieve wheat flour,baking powder,cardamom powder and mix it well and set aside.
Dissolve jaggery in a cup of water and strain it to discard the sediments. Add in vanilla essence.
Add this to flour mix and mix it well using spatula or spoon.
Add oil to it and give a good mix. Transfer this to prepared cake pan. Spread it evenly. Sprinkle dry fruits as your wish. Bake this for 20 to 25 minutes in low flame. Check by inserting tooth pick in center of cake if it comes out clean then cake is done else bake for 5more minutes.
Unmould it and cut into slices and enjoy.
Take powdered jaggery in a bowl.
Add in a cup of water and dissolve it. If you can see any dirts or sediments strain it.
Add in vanilla essence. Mix it well and set aside.
In a wide bowl,add in whole wheat flour.
Add in baking powder.
Add a pinch of salt.
Add in cardamom powder for more flavour.
Mix it well.
Make a well in center.
Add in jaggery,vanilla mix.
Mix it using spoon or spatula.
Add in oil.
Mix it well.
Transfer this to prepared cake pan.
Spread them evenly as and sprinkle dry fruits as your wish.( I used cashews and raisins)
Bake this in low flame for 20 to 25 minutes.Check by inserting tooth pick in center of cake if it comes out clean then cake is done else bake for 5more minutes.
See how beautifully it gets baked.
Unmould it.
Cut into slices.
Have a great snack with your kids.
- Don't use whisk or beater for mixing flour and jaggery mix else it will become dense.
- You can use any dry fruits.
- Even you can add any dry fruits before transferring the batter to cake pan and mix well.
- Strain the Jaggery water if you didn't use organic jaggery.
- Sieving flour is optional. I didn't sieve it because I used homemade wheat flour which is already sieved.
