Hey friends,today's recipe is capsicum methi rice. It is spicy food can made with leftover rice. Apart from lemon rice,tamrind rice you can cook many varieties which your family doesn't know it's leftover rice.
I cooked this using freshly cooked rice. It has veggies,spices totally its a wholesome food. I had this with tomato sauce tasted great. I made a big batch for our lunch. So you can half the recipe too.

Ingredients:
- Rice 6cups cooked
- Oil 1/4cup
- Onion 2 sliced
- Tomato 4-5big chopped finely
- Capsicum 1 chopped
- Green chilli 2 slited
- Kasuri methu/dried fenugreek leaves 2tablespoon
- Frozen peas 1cup
- Fennel seeds/sombu 2teaspoon
- Mustard/kadugu 2teaspoon
- Garam masala 2teaspoon
- Salt to taste
- Turmeric powder 1 teaspoon
- Chilli powder 2 teaspoon
- Coriander powder 2teaspoon
Method:
Soak kasuri methu in water for 2 minutes. Drain the water and set aside.
Heat oil in a kadai,add in mustard and fennel. Let them crackle.
Add in Onion,green chilli and saute till it turns translucent.
Add in spice powders and salt. Mix it well.
Add in tomatoes and capsicum and cook till tomato turns mushy.
Add in drained kasuri methi.
Now add in frozen peas and toss it well.
Add in cooked rice and toss it well till everything gets mixed well.
Serve hot.
